A native of the Japanese island Okinawa, the Okinawa Sweet Potato with its light brown skin and unusual intense purple flesh is richly nutritious and sweeter than other sweet potato varieties. It is a good source of vitamin C, vitamin A, manganese, copper, potassium and dietary fibre. It retains its dark purple colour when baked and its beautiful colour lends itself well to stir-fries, tempura and baking.
The Okinawa Sweet Potato takes 140 to 150 days to mature and is suitable for growing in large containers. The darkly coloured, maple shaped leaves are also edible and make a tasty, iron rich stir-fry.
This is one food plant that is a stable in my kitchen garden. It is easy to grow and provides us with a ready supply of greens that are harvested when needed. The tubers are absolutely delicious and well worth the wait.
